These vegan waffle ice cream sandwiches are seriously easy, delicious, and won’t wreck your diet! When all is said and done, these are maybe about 150 calories (for two). Believe it or not, vegan frozen waffles are a real, beautiful thing. While waffles are amazing just on their own, I wanted to do something a little extra with them. Too often I see gorgeous desserts, but can’t have them because they are not vegan. My life’s mission recently is to veganize my favorite things and spread the word to others. Almost anything you can dream of can be made vegan. I really believe that now is truly the best time to be alive as a vegan, especially when you can create such simple, yummy things as these vegan waffle ice cream sandwiches!
I decided to get a little creative with a box of Van’s Simply Delicious Raspberry & Strawberry Mini Waffles. The beauty of these is also that they are gluten free! They have an amazing texture, in fact, arguably better than regular waffles. Typically when shopping for vegan ice cream, I go for almond or cashew based milk, but I decided to go with soy this time simply because the larger container was cheaper by ounce; also, it’s lower in calories. This one is So Delicious Chocolate Velvet. I am a huge chocolate fan, and in almost any case will chose it, but these would probably be awesome with vanilla too! I think the white base would make the sprinkles look even brighter as well.
What You Need:
- Vegan waffles of your choice
- Dairy free ice cream
- Rainbow Sprinkles (because they make everything better) I suggest these natural ones!
- Cat Approval (okay, not totally necessary)
