I used to love spending Sundays in the kitchen preparing my meals for the entire week. I’ll admit, having meals ready to go is a huge weekly time saver, but as a person who works a regular full-time job, I really value my Sundays. I need them to recharge and mentally prepare for the week ahead. Because of this realization, I’ve started working on recipes and meals that are easy to prepare, but can also be made ahead of time.
This week, I decided to ditch my favorite frozen vegan burritos for my own breakfast creation: bomb breakfast burritos. These can be made pretty quickly by throwing most of the ingredients in a pan, assembling, and freezing. I strongly recommend these! That way, you can put your mind at ease and save your Sundays for all that extra rest (no judgement if you need rest from all your rest because, well, me too).
Bomb Vegan Breakfast Burritos
Ingredients
- 3 package of extra firm tofu
- 1/2 white onion (diced)
- 1 tbsp vegan butter (I use Miyoko’s)
- 1 Bag Frozen Shredded Hash Browns
- 1/2 bag of fresh spinach
- 2 tbsp apple cider vinegar
- 1 tsp turmeric
- 1-2 tbsp onion powder
- 1-2 tbsp garlic powder
- Salt and pepper to taste
- Tortillas of choice (I used flour)
- Vegan cheese of choice (optional, but I used Daiya Cheddar Slices)
- 2-3 slices of Sweet Earth Benevolent Bacon (optional)
Directions: The Filling
- Preheat oven to 425F and scatter hash browns over a large baking sheet lined with parchment paper.
- Lightly drizzle a small amount of olive oil over the hash browns and lightly sprinkle with salt.
- Bake for 15-20 minutes.
- Melt vegan butter in skillet over medium heat and add diced onions. Cook for 2-3 minutes or until slightly translucent.
- Crumble tofu blocks into skillet. You may have to break up some of the tofu with a spatula, but don’t worry if it’s not perfectly crumbled. It will crumble more and more each time you stir.
- Add apple cider vinegar and spices then combine with tofu. Cook uncovered for 5-10 minutes.
- Crumble up Benevolent Bacon slices into the pan.
- Add fresh spinach then stir to combine.
- Cook until water begins to evaporate from mixture and tofu begins to brown.
- Once hash browns are lightly browned, add to the skillet with the tofu then stir to combine.
- Add salt and pepper to taste.
Directions: The Burritos
- Lay out tortillas.
- Place 1/2 slice of vegan cheese in the middle of each (feel free to use a whole slice if you’re feeling extra cheesy).
- Spoon filling into each.
- Make your best burrito fold.
- Wrap each burrito in foil and place in a large freezer bag.
- When you’re ready to each, simply microwave or cook in George Foreman style grill (my personal favorite method).
- Serve with your favorite hot sauce or salsa. These are also amazing with avocado, but honestly, what isn’t?

These are delicious! I found the proportions a little off though. I used one block of tofu and it was enough for 6 burritos. I also dried out my tofu before cooking it. I kept everything else the same but held back a little on the spices. I used gluten free tortillas but they don’t quite bend the way the need to for a burrito so I had to eat it with a fork. Otherwise super yummy dish!
