In lieu of telling you my life story before I post this recipe, I’m just going to let you know that these doughnuts are fluffy, delightful, and shockingly vegan. Go ahead and make some, you’ll see. 💜
Perfect Vegan Doughnuts🍩
The Stuff
Doughnuts:
- 2 packages instant rise yeast ( ¼ oz. each)
- 1 can full fat coconut milk
- ½ cup granulated sugar
- 1 tsp. salt
- 2 “eggs” made with Ener-g Egg Replacer
- 5 ½ tbsp. Earth Balance (or other vegan butter)
- 5 cups all-purpose flour
- Oil of choice for frying
Glaze:
- 1/3 cup Earth Balance (or other vegan butter)
- 2 cups organic powdered sugar
- 1 tsp. pure vanilla extract
- 1-4 tbsp. vanilla soy milk (as needed to thin)
Make That Dough
- Mix yeast, 2 cups of flour, sugar
- Using an electric mixer, beat in rest of dough ingredients (except for the remaining flour)
- After the dough forms, slowly beat in the rest of the dough until it looks like the above picture. It shouldn’t be too sticky.
- Cover dough and let rise until double in size (if I’m being honest, I didn’t wait that long, but you are a patient angel who can do it! I think using fast rise yeast is helpful for us impatient people, too.)
- After dough is ready, use a floured rolling pin to roll the dough into a 1/2 in thick disk over a floured surface
- Use a doughnut cutter or jar lid and shot glass to create your doughnuts!
- Cover and let double in size for about 30 minutes
Time to Fry
- Heat oil in a deep fryer (or in a pot on your stovetop) to 350°F
- Carefully place doughnuts into oil
- Fry doughnuts for about 1 minute per side (until they’re golden)
- Be super careful taking them out of the fryer and donut try to eat these immediately. They’re hot (I have to say that, right?)!
- Place doughnuts on wire rack or paper towel covered plate to cool
Glaze it Up
Blend all ingredients together (yes, it’s really that simple). If you feel like the glaze is too thick, just water it down a little with some extra soy milk. I also created a strawberry frosting for the pink doughnuts and a vanilla for the Oreo doughnuts pictured above. Here’s how to modify:
- Vanilla- put some of this glaze to the side before thinning it out and add a little bit more powdered sugar to thicken.
- Strawberry- follow same steps for vanilla. Then, combine a 1/2 cup of strawberries in a blender. YUM.
Top it Off
This is the super fun part! I love this step because it’s the most creative. I used a fruity o’s cereal, Oreo’s, and sprinkles, but the possibilities are seriously endless. Next time, I will probably make them even more over the top. I LOVE trying new things and finding ways to make vegan foods exciting.
